Description
Fresh, crisp, and full of flavor, this mandarin orange salad is topped with crunchy almonds and a homemade citrus dressing. A quick and colorful side dish for any meal.
Ingredients
- 1 (10-ounce) bag spring mix (or spinach)
- 1 (11-ounce) can mandarin oranges, drained
- 1/2 cup dried cranberries
- 1/3 cup sliced almonds (or walnuts/pecans)
- 1/4 cup frozen orange juice concentrate (do not dilute)
- 1/2 teaspoon orange zest
- 1/4 cup olive oil (or vegetable oil)
- 2 Tablespoons granulated sugar
- 1 Tablespoon apple cider vinegar
- 1/2 Tablespoon lemon juice
- 1 teaspoon poppy seeds
- 1/4 teaspoon kosher salt
Instructions
1. In a large bowl, combine the spring mix, mandarin oranges, dried cranberries, and sliced almonds.
2. In a mason jar, add the orange juice concentrate, orange zest, olive oil, sugar, vinegar, lemon juice, and salt.
3. Seal the jar and shake well until fully combined.
4. Add the poppy seeds and shake again just before serving.
5. Pour the dressing over the salad and toss until evenly coated.
6. Serve immediately and enjoy.
Notes
You can customize this salad by adding sliced green onions, mushrooms, avocado, or diced tomatoes.
Store leftover dressing in an airtight container in the refrigerator for up to 5 days.
For extra crunch, toast the almonds before adding them.
Best served fresh to maintain crisp texture.
