Ingredients
3 cups cauliflower florets, chopped
1 1/2 cups cherry tomatoes, halved
1 cup broccoli florets, chopped
1 cup sweet yellow onion, thinly sliced
3/4 cup cucumber, sliced
1/3 cup olive oil
1/4 cup apple cider vinegar
1 tbsp Dijon mustard
2 cloves garlic, minced
1 tsp dried oregano

Instructions
In a large mixing bowl, combine the cauliflower, tomatoes, broccoli, onion, and cucumber.
In a separate small bowl or jar, whisk together the olive oil, apple cider vinegar, Dijon mustard, minced garlic, oregano, salt, and pepper until emulsified.
