Ingredients

1 tablespoon butter
1 tablespoon olive oil
1 small yellow onion, finely diced
5 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
2 teaspoons Italian seasoning
1/2 teaspoon paprika
1 teaspoon red pepper flakes
Kosher salt and black pepper to taste
6 cups chicken broth (low sodium)
1 can (15 oz) fire-roasted tomatoes
1 can (15 oz) cannellini beans, drained and rinsed
2 cups cooked chicken, shredded
1 package (9-12 oz) cheese tortellini
1/2 cup heavy cream
2 cups fresh kale, chopped
Fresh parmesan cheese for serving


Instructions

Heat butter and olive oil in a large pot over medium heat.
Add the onion and sauté until softened, about 5 minutes.
Stir in the minced garlic, sun-dried tomatoes, Italian seasoning, paprika, and red pepper flakes; cook for 1 minute until fragrant.
Pour in the chicken broth, fire-roasted tomatoes (with juices), and cannellini beans.
Bring the soup to a gentle simmer.
Add the cheese tortellini and cook according to package directions, usually 3-5 minutes.
Stir in the shredded chicken and heavy cream, heating through for 2 minutes.
Fold in the fresh kale and cook until just wilted.
Season with salt and pepper to taste and serve warm with a garnish of parmesan.


Notes

Use rotisserie chicken to speed up preparation time. Ensure the kale stems are removed for a better texture. Store leftovers in an airtight container for up to 3 days; note that tortellini may absorb liquid over time.
