Description

This Mediterranean Chicken Zucchini Bake combines fresh veggies and chicken for a healthy dinner option.


Ingredients

  • 4 chicken breasts
  • 2 medium zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 cup Kalamata olives
  • 2 tablespoons olive oil
  •  
  • For the Seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  •  
  • For Garnishing
  • 1 cup feta cheese, crumbled
  • 1 handful fresh parsley, chopped
  • 1 lemon, cut into wedges

Instructions

1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil or line it with parchment paper.

2. Cut the chicken breasts and vegetables into evenly sized pieces and halve the cherry tomatoes.

3. In a large mixing bowl, combine chicken, zucchini, bell peppers, red onion, garlic, olives, olive oil, oregano, basil, paprika, salt, and black pepper.

4. Transfer the mixture into the prepared baking dish and spread it into an even layer.

5. Bake for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.

6. Remove from the oven and sprinkle with feta cheese and fresh parsley.

7. Serve warm with lemon wedges on the side.


Notes

Ensure all ingredients are chopped into similar sizes for even cooking.

Avoid overcrowding the baking dish so the vegetables roast properly instead of steaming.

Fresh herbs may be substituted for dried herbs for a brighter Mediterranean flavor.
