Description

A refreshing Mexican-inspired cucumber salad with sweet corn, cotija cheese, and a creamy elote-style dressing with a hint of lime and spice.


Ingredients

  • 2 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 2 tablespoons cotija cheese
  • 1 lime (zest and juice)
  • 1/2 teaspoon elote seasoning or chili powder
  • 1 clove garlic, minced
  • 6 mini cucumbers, thinly sliced
  • 1 cup frozen corn, thawed
  • 1/4 cup cilantro, minced
  • 2 tablespoons red onion, minced
  • Sea salt, to taste

Instructions

1. In a medium bowl, mix the sour cream, mayonnaise, cotija cheese, lime zest and juice, elote seasoning, and minced garlic until smooth.

2. Add the sliced cucumbers, thawed corn, cilantro, and minced red onion to the bowl.

3. Toss everything together until well combined and evenly coated with the dressing.

4. Season with sea salt to taste and serve immediately.


Notes

Feta cheese can be used as a substitute for cotija cheese.

For extra heat, add a pinch of cayenne or diced jalapeño.

Best served fresh but can be chilled for 30 minutes before serving for enhanced flavor.
