Description
A rich and flavorful garlic butter shrimp scampi made with juicy shrimp, fresh garlic, white wine, and lemon for a restaurant-quality dish at home.
Ingredients
- For the shrimp:
- 3 tbsp olive oil
- 3 tbsp butter (unsalted preferred)
- 6 garlic cloves, minced
- 1.25 lb shrimp, peeled and deveined (tails on)
- 1/4 tsp salt
- 1/4 tsp black pepper

- For the sauce:
- 1/4 cup dry white wine (such as Pinot Grigio)
- 1/2 tsp red pepper flakes
- 3 tbsp butter
- 2.5 tbsp lemon juice, freshly squeezed
- 1/4 cup fresh parsley, chopped
- 1/4 tsp onion powder
Instructions
1. Mince the garlic, squeeze the lemon juice, chop parsley, and prepare shrimp. Measure all ingredients before starting.
2. Heat olive oil and butter in a large skillet over medium-high heat until butter is melted and foamy.
3. Add minced garlic and cook for 30–60 seconds until fragrant, stirring constantly.
4. Add shrimp in a single layer, season with salt and pepper, and cook 1–2 minutes per side until pink and slightly translucent in the center.
5. Pour in white wine and add red pepper flakes, scraping up browned bits. Simmer for 1–2 minutes until reduced by half.
6. Remove from heat and stir in remaining butter until melted and smooth.
7. Add lemon juice, onion powder, and parsley, tossing gently to combine.
8. Serve immediately with pasta, rice, or crusty bread, spooning sauce over the top.
Notes
Use fresh garlic for the best flavor and avoid browning it to prevent bitterness.
Cooking shrimp quickly prevents them from becoming rubbery.
Removing the pan from heat before adding final butter keeps the sauce smooth and glossy.
Serve immediately for best texture and flavor.
