Light and flavorful teriyaki zucchini noodles tossed with garlic, sesame seeds, and a savory homemade sauce for a quick and nutritious meal.
Ingredients
- Kosher salt
- 1 lb zucchini, julienned into thin strands
- 1 tbsp vegetable oil
- 1 medium onion, finely chopped
- Ground black pepper
- 3 garlic cloves, minced
- 1 tbsp vegetable oil
- 2 tbsp teriyaki sauce
- 1 tbsp toasted sesame seeds
- 1 tbsp low-sodium soy sauce
- Chopped fresh cilantro, optional for garnish
Instructions
1. In a large bowl, combine minced garlic, low-sodium soy sauce, toasted sesame seeds, teriyaki sauce, and vegetable oil. Mix thoroughly to create the sauce.
2. Heat 1 tablespoon vegetable oil in a skillet over medium heat. Add the chopped onion and sauté until softened.
3. Add the zucchini noodles and stir-fry for about 2 minutes until slightly tender but still crisp.
4. Season the zucchini mixture with kosher salt and freshly ground black pepper to taste.
5. Pour the prepared sauce over the zucchini noodles and toss well to coat evenly.
6. Cook for 1 additional minute to allow the flavors to combine, then remove from heat immediately.
7. Serve warm and garnish with extra toasted sesame seeds and chopped fresh cilantro if desired.
Notes
Do not overcook the zucchini noodles or they may become watery.
Use low-sodium soy sauce and teriyaki sauce to better control salt levels.
A spiralizer works best for creating even zucchini noodles.
Add cooked chicken, tofu, or shrimp for extra protein.
