3 tablespoons extra virgin olive oil
1 pound lean ground beef
1 cup yellow onion, diced
1 cup carrots, diced
1 cup celery, diced
3 cloves garlic, minced
3 cans (8 oz each) tomato sauce
2 cans (14.5 oz each) chicken broth
1 can (15 oz) diced tomatoes, undrained
2 tablespoons Italian seasoning blend
2 teaspoons salt
1 teaspoon ground black pepper
1 can (15 oz) dark red kidney beans, drained and rinsed
1 can (15 oz) great northern beans, drained and rinsed
8 ounces ditalini pasta


Instructions

Heat olive oil in a large pot or Dutch oven over medium-high heat.
Add the ground beef and cook until browned, breaking it up with a spoon; drain excess fat if necessary.
Add the diced onion, carrots, and celery to the pot and sauté for 5-7 minutes until softened.
Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the tomato sauce, chicken broth, and diced tomatoes with their juices.
Add the Italian seasoning, salt, and pepper, then stir to combine.
Bring the soup to a gentle boil, then reduce heat and simmer for 15 minutes.
Stir in the kidney beans, great northern beans, and dry pasta.
Continue to simmer for about 10 minutes, or until the pasta is tender.
Remove from heat and serve warm.


Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will absorb some broth over time, so you may need to add a splash of water or extra broth when reheating. For a thicker consistency, mash a small portion of the beans before adding them to the pot.
