Description

One-Pot Shrimp Orzo is a quick and flavorful dish featuring tender shrimp, delicate orzo pasta, garlic, fresh herbs, and bright lemon juice—all cooked in one pot for easy cleanup and delicious results.


Ingredients

  • 1 cup orzo pasta
  • 1 lb shrimp (peeled and deveined)
  • 4 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 4 cloves garlic (minced)
  • ½ cup fresh parsley (chopped)
  • 2 tbsp lemon juice

Instructions

1. In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

2. Add shrimp to the pot and cook until pink and opaque, about 3–4 minutes.

3. Stir in orzo pasta and chicken broth; bring to a gentle boil. Reduce heat and simmer for about 10 minutes until orzo is al dente.

4. Remove from heat, then stir in lemon juice and chopped parsley.

5. Serve warm, garnished with additional parsley if desired.


Notes

Use fresh or frozen shrimp (thawed) for best results.

Adjust lemon juice to taste for more brightness.

Add a pinch of red pepper flakes for a bit of heat.

You can substitute vegetable broth to make it lighter.
