Ingredients
8 ounces orzo pasta
1 large sweet potato (about 12 ounces), diced
2 medium onions, finely diced
4 cloves garlic, minced
1 tablespoon peeled and grated fresh ginger
6 ounces shiitake mushrooms, stems removed and caps diced
1 tablespoon balsamic vinegar
2 tablespoons soy sauce
3 large leaves Swiss chard or kale, stems removed and finely chopped
3 tablespoons grapeseed or vegetable oil
Salt and freshly ground black pepper to taste
Instructions
Bring a large pot of salted water to a boil and cook orzo according to package directions until al dente; drain and set aside.
While the pasta cooks, heat 2 tablespoons of oil in a large skillet over medium-high heat.
Add the diced sweet potatoes and cook, stirring occasionally, until deeply golden brown and tender, about 8-10 minutes; remove from pan.
In the same skillet, add the remaining oil and the shiitake mushrooms, sautéing until browned.
Add the onions to the mushrooms and cook until translucent, then stir in the garlic and grated ginger, cooking for 1 minute until fragrant.
Return the sweet potatoes to the pan and add the chopped Swiss chard or kale, cooking until just wilted.
Stir in the cooked orzo, balsamic vinegar, and soy sauce, tossing everything to combine and coat the pasta uniformly.
Season with salt and pepper to taste and serve immediately.
Notes
To ensure a nice sear on the vegetables, do not crowd the pan; work in batches if necessary. You can substitute kale or Swiss chard with spinach if desired. This dish keeps well in an airtight container in the refrigerator for up to 3 days.
