Description

This pasta salad is a vibrant mix of flavors and textures, featuring tender bowtie pasta, fresh veggies, and a sprinkle of tangy Parmesan. A delightfully easy and refreshing dish!

Ingredients

Scale
  • 12 oz bowtie pasta (farfalle)
  • 1 cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh baby spinach leaves
  • 1/2 red onion, thinly sliced
  • 1/2 cucumber, diced
  • 1/4 cup black olives, sliced
  • 1/4 cup Italian dressing
  • Salt and pepper to taste
  • Optional: fresh basil leaves for garnish

Instructions

1. Cook the bowtie pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Allow to cool completely.

2. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, baby spinach, red onion, cucumber, and black olives.

3. Pour the Italian dressing over the salad ingredients and toss gently until everything is evenly coated.

4. Add the grated Parmesan cheese and toss again to combine. Season with salt and pepper to taste.

5. Transfer the salad to a serving dish. Garnish with fresh basil leaves if desired.

6. Cover and refrigerate for at least 30 minutes to let the flavors meld together.

7. Serve chilled and enjoy!

Notes

You can prepare this salad a day in advance to enhance the flavors.

For added protein, consider adding grilled chicken or cooked shrimp.

Substitute baby arugula or kale for spinach if preferred.

Use your favorite store-bought Italian dressing or make your own for a personalized touch.

This dish is perfect for picnics, potlucks, or a light lunch.
