Description

This hearty, rustic Italian-inspired stew turns a busy weeknight into a cozy celebration. Combining lean ground beef, tender ditalini pasta, and two varieties of protein-packed beans, this one-pot wonder is infused with savory aromatics and finished with a bright, herbal pop of fresh basil. It is the ultimate comfort food—wholesome, filling, and perfect for meal-prepping or feeding a hungry family without spending all evening in the kitchen.


Ingredients

1 tablespoon olive oil
1 pound lean ground beef
1 medium yellow onion, diced
2 medium celery stalks, finely chopped
1 medium carrot, diced
4 cups chicken broth
1 can (28-ounces) diced tomatoes in juice
1 can (15-ounces) red kidney beans, drained and rinsed
1 can (15-ounces) cannellini beans, drained and rinsed
6 ounces dried ditalini or small tube pasta
1/2 cup fresh basil, chopped
Salt and black pepper to taste


Instructions

Heat the olive oil in a large pot or Instant Pot over medium-high heat.
Add the ground beef and cook until browned, breaking it apart with a spoon, then drain excess fat.
Stir in the onion, celery, and carrot, sautéing until the vegetables begin to soften.
Pour in the chicken broth and diced tomatoes with their juices, scraping the bottom of the pot to release any flavorful bits.
Add the kidney beans and cannellini beans, stirring to combine.
Bring to a simmer and cook until vegetables are tender, or pressure cook on high for 5 minutes followed by a natural release.
Add the dried pasta to the pot and cook until al dente, stirring occasionally to prevent sticking.
Remove from heat, stir in the fresh basil, and season with salt and pepper to taste.
Serve immediately while warm.


Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will continue to absorb liquid, so you may need to add a splash of broth when reheating. Fresh basil should be stirred in just before serving to maintain its bright color and flavor.
