Description

This Pasta with Feta Cheese and Cherry Tomatoes is a quick and flavorful Mediterranean-inspired vegetarian dish made with farfalle pasta, juicy tomatoes, spinach, garlic, and creamy feta cheese. Ready in just 30 minutes, it’s perfect as a healthy main course or a side dish.


Ingredients

  • 10 oz farfalle bow-tie pasta
  • 1 tablespoon olive oil
  • 8 oz grape tomatoes, halved
  • 5 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • 5 oz fresh spinach, chopped
  • 6 oz crumbled feta cheese
  • 3 tablespoons freshly squeezed lemon juice

Instructions

1. Bring a large pot of water to a boil. Add pasta and cook according to package instructions. Drain well.

2. While the pasta cooks, heat olive oil in a large high-sided skillet over medium heat.

3. Add halved grape tomatoes, minced garlic, salt, paprika, and Italian seasoning. Cook for about 2 minutes until the tomatoes soften and release juices.

4. Stir in chopped spinach and cook until wilted.

5. Add crumbled feta cheese and stir until combined.

6. Add the cooked and drained pasta along with freshly squeezed lemon juice.

7. Reheat everything together over medium heat for 1 minute, stirring to combine. Add an extra drizzle of olive oil if desired.

8. Serve warm as a vegetarian main dish or side.


Notes

For a dairy-free version, use vegan feta cheese.

For a gluten-free option, substitute gluten-free pasta.

Other vegetables that pair well include bell peppers, zucchini, asparagus, artichokes, arugula, and sun-dried tomatoes.

Parmesan or fresh mozzarella can be used instead of or alongside feta cheese.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze for up to 1 month for easy meal prep.

Reheat gently on the stovetop or microwave with a splash of olive oil or water to keep the pasta from drying out.
