Ingredients
1/3 cup high-quality butter
1/2 cup yellow onion, finely diced
1/2 cup fresh mushrooms, thinly sliced
2 cups fresh green beans, trimmed and sliced into bite-sized pieces
3 cups chicken broth or vegetable stock
1 can (10-1/4 oz.) cream of mushroom soup
1 can (2.8 oz.) French-fried onion rings
Pinch of kosher salt
Freshly cracked black pepper to taste
1/2 teaspoon garlic powder
1 cup sharp Cheddar cheese, freshly shredded
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, melt the butter over medium heat.
Add the diced onions and sliced mushrooms to the skillet and sauté until soft and fragrant.
Stir in the green beans and garlic powder, then add the chicken or vegetable broth.
Simmer the mixture until the green beans are tender and most of the liquid has reduced.
Remove from heat and stir in the cream of mushroom soup and half of the shredded cheddar cheese.
Transfer the mixture into a greased baking dish.
Top the casserole with the remaining cheddar cheese and the French-fried onion rings.
