Description
This peach watermelon salad without feta is an easy-peasy summer salad made with fresh fruit, crisp cucumber, and a sweet mint basil vinaigrette.
Ingredients
- 3 peaches
- 1 mini watermelon
- 1 English cucumber
- 2 tablespoon avocado oil or olive oil
- 3 tablespoon maple syrup
- 2 tbsp lemon juice
- 1 cup basil leaves tightly packed
- 1/2 cup mint leaves tightly packed
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
Instructions
1. Cut the peaches, cucumber, and watermelon into small slices or cubes and transfer to a large bowl.
2. Add all dressing ingredients to a blender and blend until slightly chunky but combined.
3. Pour the dressing over the fruit and gently toss to combine.
4. Serve immediately for best freshness.
Notes
You can prep the fruit and dressing separately and refrigerate for up to 2 hours before serving.
Toss the salad just before serving to keep it fresh and crisp.
Store leftovers covered in the fridge for up to 1 day.
Extra dressing can be used for other salads.
