Ingredients
5 oz mixed salad greens
1 ripe pear, thinly sliced
1/2 cup pomegranate arils
1/2 cup pecans, toasted and chopped
1/3 cup crumbled feta cheese
3 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tsp honey
1 tsp poppy seeds
1/4 tsp salt
1/8 tsp black pepper
Instructions
In a small bowl, whisk together the olive oil, apple cider vinegar, honey, poppy seeds, salt, and pepper to create the dressing.
Place the mixed greens in a large salad bowl.
Arrange the thin pear slices, pomegranate arils, chopped pecans, and crumbled feta over the greens.
Drizzle the prepared dressing over the salad just before serving.
Toss gently to coat and serve immediately.
Notes
To toast pecans, place them in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant. If preparing in advance, keep the dressing separate and store the pears in a little lemon water to prevent browning before assembly.
