Ingredients
- 1 lb (450 g) chicken breast or thighs, diced
- 1 tablespoon oil
- Salt and pepper to taste
- 2 cups cooked rice (white, jasmine, or brown)
- 1 cup pineapple chunks
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1 teaspoon grated ginger (optional)
- Green onions or sesame seeds for garnish
Instructions
1. Heat oil in a large skillet. Season diced chicken with salt and pepper and cook until golden and fully cooked through, then remove and set aside
2. In a bowl, whisk together pineapple juice, soy sauce, honey, cornstarch, garlic, and ginger until smooth
3. Add pineapple chunks to the skillet and cook briefly, then pour in the sauce mixture
4. Simmer the sauce until it thickens and becomes glossy
5. Return the cooked chicken to the pan and toss until evenly coated in the sauce
6. Serve the pineapple chicken over warm cooked rice and garnish with green onions or sesame seeds

Store leftovers in an airtight container in the refrigerator for up to 3 days
