1.5 lbs chicken breast, cut into bite-sized cubes
1 tsp paprika
0.5 tsp salt
0.5 tsp ground black pepper
2 tbsp olive oil
1 small yellow onion, finely diced
1 red bell pepper, seeded and diced
1 medium zucchini, sliced into half-moons
1 yellow squash, sliced into half-moons
1 small eggplant, cut into small cubes
3 garlic cloves, minced
15 oz canned diced tomatoes with juices
1 tsp dried oregano
1 tsp dried thyme
1 cup shredded mozzarella cheese
0.25 cup grated parmesan cheese


Instructions

Preheat your oven to 375°F.
In a large bowl, toss the chicken cubes with paprika, salt, and pepper until evenly coated.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat and brown the chicken until golden on all sides, then remove and set aside.
In the same skillet, add the remaining oil and sauté the onion, bell pepper, zucchini, yellow squash, and eggplant until slightly softened.
Stir in the minced garlic, tomatoes with their juices, oregano, and thyme, allowing the mixture to simmer for 3-5 minutes.
Return the chicken to the skillet, stir to combine, and transfer the mixture into a large baking dish.
Sprinkle the mozzarella and parmesan cheese evenly over the top.
Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden brown.


Notes

Ensure all vegetables are cut into roughly the same size for even cooking. For extra flavor, you can let the casserole sit for 5 minutes after removing from the oven before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
