Savory roasted mushrooms tossed in a rich balsamic, soy, and garlic glaze, caramelized to perfection for an easy and flavorful side dish.
Ingredients
- 2 lb whole mushrooms (baby bella or cremini)
- 3 garlic cloves, minced (about 1 tbsp)
- 2 tbsp soy sauce
- 3 tbsp balsamic vinegar
- 1 tbsp vegetable oil
- 1/2 tsp fresh thyme, finely chopped
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
1. Preheat oven to 400°F. Gently wipe mushrooms clean with a damp paper towel, trim stems if needed, and leave whole or halve large ones. Arrange on a baking sheet in a single layer.
2. In a small bowl, whisk together vegetable oil, balsamic vinegar, and soy sauce. Add minced garlic, chopped thyme, salt, and freshly ground black pepper.
3. Pour the mixture over the mushrooms and toss until evenly coated, keeping them in a single layer.
4. Roast in the oven for 10 minutes.
5. Remove from oven, stir mushrooms and scrape up any caramelized bits, then return to oven for another 10 minutes until golden and tender with a glossy glaze.
6. Transfer to a serving dish and serve warm.
Notes
Use freshly ground black pepper for best flavor.
Do not wash mushrooms under water as they absorb moisture.
Ensure mushrooms are spaced out to roast instead of steam.
Aged balsamic vinegar adds deeper flavor.
Serve as a side, appetizer, or over grains.
