Ingredients
2 sweet potatoes or jewel yams, cut into 1-inch cubes
3 tablespoons olive oil, divided
Salt and freshly ground black pepper to taste
1 yellow onion, thinly sliced
3 cloves garlic, minced
1 bunch kale, stems removed and leaves torn into bite-sized pieces
2 tablespoons apple cider vinegar
1 teaspoon fresh thyme, finely chopped
Instructions
Preheat your oven to 400°F (200°C).
Toss cubed sweet potatoes with 2 tablespoons of olive oil, salt, and pepper on a baking sheet.
Roast for 25-30 minutes, turning halfway, until tender and lightly caramelized.
While potatoes roast, heat remaining tablespoon of olive oil in a skillet over medium heat.
Add sliced onion and cook until caramelized, about 8-10 minutes, then add minced garlic and cook for 1 minute.
Add torn kale to the skillet, stirring until wilted and vibrant.
Stir in the apple cider vinegar and thyme.
Combine roasted sweet potatoes with the kale mixture in a large serving bowl.
