Ingredients
3 tablespoons olive oil
1 large onion, diced
3 large carrots, peeled and chopped
3 cloves garlic, grated
8 cups chicken stock
2 cups shredded rotisserie chicken
1 cup small dried pasta or egg noodles

Black pepper to taste
1 handful fresh parsley or dill, chopped
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat.
Add the diced onion and carrots, sautéing until the onion is translucent and carrots begin to soften, about 5-7 minutes.
