Ingredients
2 tablespoons olive oil
2 large carrots, peeled and diced

1/2 pound ground beef or chicken Italian sausage
2 cans (14.5 oz each) chicken or vegetable broth
1 cup water
1 can (6 oz) tomato paste
2.5 to 3 cups uncooked cheese tortellini
1 can cannellini or pinto beans, drained and rinsed
1 tablespoon fresh chopped parsley
Instructions
Heat olive oil in a large stockpot over medium heat.
Add carrots, celery, onion, and garlic; sauté for 2-3 minutes until softened.
Stir in the flour, oregano, salt, and pepper to coat the vegetables.
Add the ground sausage and brown thoroughly until no longer pink.
