Description

A hearty and flavorful casserole made with lean ground turkey, tender zucchini, wholesome groats, diced tomatoes, fresh basil, and melted sharp cheddar cheese baked to perfection.


Ingredients

  • 1 lb ground turkey (93% lean)
  • 1/2 tsp smoked paprika
  • 1 can diced tomatoes
  • 7 oz cheddar cheese, shredded
  • 2 tbsp olive oil
  • 1/2 cup fresh basil, chopped
  • 2 cups cooked groats
  • 2 garlic cloves, minced
  • 1.5 lb zucchini, diced
  • 1/2 cup chopped onion
  • 1/2 tsp oregano

Instructions

1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

2. Heat a large skillet over medium-high heat and add olive oil.

3. Add the ground turkey and cook, breaking it apart, until browned.

4. Add chopped onion and minced garlic and cook for 2 minutes until fragrant.

5. Add diced zucchini and cook for 3-4 minutes until slightly softened.

6. Stir in cooked groats, diced tomatoes, oregano, smoked paprika, basil, and half of the shredded cheddar cheese.

7. Mix well until everything is evenly combined.

8. Coat a 9×13 baking dish with cooking spray and spread the turkey mixture evenly into the dish.

9. Top with the remaining shredded cheese.

10. Bake uncovered for 20-25 minutes until the cheese is bubbly and lightly golden.

11. Remove from the oven and let cool for a few minutes before serving.


Notes

You can assemble the casserole ahead of time and refrigerate until ready to bake.

For freezer storage, cover tightly with foil and freeze before baking. Defrost completely before cooking.

Sharp cheddar cheese adds the best flavor, but mozzarella or Monterey Jack can also be used.

Fresh basil provides the best flavor, but dried basil may be substituted if needed.
