Description

Shrimp, corn, potatoes, and smoked sausage foil packs are a flavorful, easy one-pan meal perfect for weeknights or outdoor grilling.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 12 oz smoked sausage (andouille or kielbasa), sliced
  • 3 ears corn, cut into thirds
  • 1 lb red potatoes, quartered
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

1. Preheat oven to 400°F (200°C) or heat grill to medium-high.

2. Wash and quarter potatoes, cut corn into thirds, slice sausage, and prepare shrimp.

3. In a large bowl, combine shrimp, sausage, corn, and potatoes.

4. Drizzle with olive oil and add garlic, Cajun seasoning, salt, and pepper.

5. Toss everything until evenly coated.

6. Divide mixture evenly onto large sheets of aluminum foil.

7. Fold foil over ingredients and seal edges tightly to form packets.

8. Place foil packs on a baking sheet or directly on the grill.

9. Cook for 25–30 minutes, until potatoes are tender and shrimp are cooked through.

10. Carefully open foil packs, garnish with parsley, and serve with lemon wedges.


Notes

Cut ingredients into uniform sizes for even cooking.

Place potatoes at the bottom of the foil pack since they take longer to cook.

Seal foil tightly to trap steam and prevent leaks.

Parboil potatoes beforehand if you want faster cooking.

Adjust Cajun seasoning based on your spice preference.
