Description
These stuffed peppers combine the best flavors of Mexican cuisine with seasoned chicken, onions, and melted mozzarella, finished with fresh toppings.
Ingredients
- 2 red bell peppers, sliced in half lengthwise
- 2 yellow bell peppers, sliced in half lengthwise
- 2 pounds boneless chicken breast, diced
- 3 yellow onions, diced
- 2 tbsp olive oil
- 1/2 cup mozzarella cheese, diced or shredded
- 1/2 tsp chili flakes
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground black pepper
- 1 tsp salt
- 2 limes, sliced
- 1 tbsp fresh cilantro, chopped
- 1 large avocado, diced
Instructions
1. Preheat oven to 375°F and slice bell peppers in half lengthwise, keeping stems intact
2. Place peppers cut-side down and bake for 15 minutes until slightly softened
3. Dice chicken and onions and set aside
4. Heat 1 tbsp olive oil in a large skillet and cook onions until golden and translucent
5. Add chicken and cook until fully done
6. Season with fajita seasoning mixture and remove from heat
7. Turn peppers upright and fill with chicken mixture, then top with mozzarella
8. Bake for 15 to 20 minutes until peppers are tender and cheese is melted
9. Serve warm topped with avocado, lime juice, and cilantro
