Ingredients
2 lbs ground turkey
2 cans (14.5 oz each) diced fire-roasted tomatoes with green chilis
1 can (15 oz) tomato sauce
1 can (15 oz) kidney beans, rinsed and drained
1 cup corn kernels
1 bell pepper, diced
1 onion, diced
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon smoked paprika
Salt and black pepper to taste
Instructions
In a skillet over medium-high heat, brown the ground turkey until fully cooked. Drain any excess liquid.
Transfer the cooked turkey to the slow cooker.
Add the fire-roasted tomatoes, tomato sauce, kidney beans, corn, diced bell pepper, and diced onion to the slow cooker.
Stir in the chili powder, cumin, smoked paprika, salt, and pepper.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
