1 can (14 ounces) full-fat coconut milk
1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
2 tablespoons Thai red curry paste (ensure no shrimp/alcohol ingredients)
4 cups chicken broth
1 tablespoon fresh lemongrass, minced
2–3 kaffir lime leaves
8 ounces rice noodles
1 cup broccoli florets
1 bell pepper, sliced
1/4 cup fresh basil leaves, torn
1/4 cup fresh mint leaves
1 tablespoon vegetable oil


Instructions

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
Add the red curry paste and cook for 1 minute until fragrant.
Stir in the coconut milk and chicken broth, bringing the mixture to a gentle simmer.
Add the lemongrass and kaffir lime leaves to the broth.
Add the chicken pieces and simmer for about 8-10 minutes until the chicken is fully cooked through.
Add the broccoli and bell peppers, cooking for 3-4 minutes until tender-crisp.
While the vegetables cook, prepare the rice noodles according to package directions, then drain.
Divide the cooked noodles into serving bowls.
Ladle the hot soup over the noodles, ensuring everyone gets plenty of chicken and vegetables.
Top with fresh basil and mint before serving.


Notes

Adjust the spice level by adding more or less red curry paste to suit your preference. You can easily substitute the vegetables with whatever is in your fridge, such as snap peas, bok choy, or sliced carrots. If you prefer a lighter broth, you can use light coconut milk instead of full-fat.
