1 yellow onion, roughly chopped
3–4 cloves garlic, roughly chopped
1 fresh jalapeño pepper, stem and seeds removed and roughly chopped
Kosher salt and freshly cracked black pepper, to taste
1/4 teaspoon dried oregano
1/4 teaspoon ground cumin
1/2 teaspoon ground chipotle pepper
1 (14-ounce) can fire-roasted tomatoes and green chiles
3 cups high-quality chicken stock
3/4 cup black beans, rinsed and drained
3/4 cup frozen corn
1 cup shredded rotisserie chicken
For serving: shredded Colby Jack cheese, diced avocado, crispy tortilla strips


Instructions

Heat olive oil in a large pot over medium heat.
Add the onion, garlic, and jalapeño to the pot; sauté until softened and fragrant.
Season the vegetables with salt, pepper, oregano, cumin, and ground chipotle pepper.
Add the fire-roasted tomatoes with green chiles and the chicken stock to the pot.
Transfer the mixture to a blender and process until smooth for a velvety base, or leave slightly chunky if preferred; return to the pot.
Stir in the black beans, corn, and shredded rotisserie chicken.
