Description

This Watermelon Salad is a light and refreshing mix of sweet watermelon, salty feta, crisp cucumber, and fresh mint.


Ingredients

Scale
  • 4 cups watermelon (cubed, seedless)
  • ½ cup cucumber (thinly sliced or diced)
  • ½ cup feta cheese (crumbled)
  • ¼ cup red onion (very thinly sliced)
  • 2 tbsp fresh mint leaves (chopped)
  • 1 tbsp olive oil
  • 1 tbsp fresh lime or lemon juice
  • Salt and pepper to taste

Instructions

1. Cut the watermelon into bite-sized cubes. Thinly slice the cucumber and red onion. Chop the mint leaves.

2. In a large bowl, combine watermelon, cucumber, red onion, feta, and mint.

3. Drizzle with olive oil and lime juice. Gently toss everything together. Taste and add salt and pepper if needed.

4. Chill for 10–15 minutes if desired, then serve cold. Best eaten the same day for freshness.


Notes

For extra flavor, add a drizzle of balsamic glaze before serving.

Use chilled watermelon for the most refreshing taste.
