Description

Ingredients

1 cup Brussels sprouts, halved or quartered
1 leek, thinly sliced
1 cup sweet potatoes, peeled and cubed
8 oz bowtie pasta
1 cup mushrooms, sliced
2 tbsp olive oil
3 cloves garlic, minced
1/2 cup vegan mayonnaise
1 tbsp apple cider vinegar
1 tbsp maple syrup
1 tbsp poppy seeds
Salt and black pepper to taste


Instructions

Preheat your oven to 400°F (200°C).
Toss diced sweet potatoes, halved Brussels sprouts, sliced mushrooms, and leeks with olive oil, salt, and pepper on a large baking sheet.
Roast the vegetables for 20-25 minutes until caramelized and tender.
Meanwhile, bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
In a small bowl, whisk together the vegan mayonnaise, apple cider vinegar, maple syrup, poppy seeds, and minced garlic to create the dressing.
Drain the pasta and combine it in a large mixing bowl with the roasted vegetables.
Pour the dressing over the salad and toss gently to coat everything evenly.
Serve warm, at room temperature, or chilled.


Notes

You can add toasted pecans or dried cranberries for an extra autumnal crunch and sweetness. Store leftovers in an airtight container in the refrigerator for up to 3 days. If the salad appears dry after chilling, add a splash of water or a little extra vegan mayonnaise before serving.
