Ingredients
- 2 English cucumbers, thinly sliced or diced
- 6 green onions, thinly sliced
- 8 cups watermelon, cubed into 1-inch pieces
- 1/4 cup fresh mint, finely chopped
- 1/2 tsp black pepper, freshly ground
- 1/4 cup extra virgin olive oil
- 1/2 tsp salt
- 1/4 cup balsamic vinegar
Instructions
1. In a large serving bowl, combine the cubed watermelon, sliced cucumbers, green onions, and chopped mint. Toss gently to evenly distribute the ingredients.
2. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and black pepper until smooth and well combined.
3. Pour the dressing over the salad and toss gently until all ingredients are evenly coated.
4. Serve immediately for the freshest flavor, or refrigerate for up to 2 hours before serving. Toss again before serving if chilled.
5. Taste the salad and adjust the seasoning with additional salt or pepper if desired.
