8 cups low sodium chicken stock
2 inch piece of ginger, peeled and sliced
3 garlic cloves, smashed
2 tablespoons soy sauce
1 tablespoon rice vinegar
1/2 teaspoon sesame oil
1 lb ground chicken
2 green onions, finely chopped
1 teaspoon grated ginger
1 teaspoon soy sauce
0.5 teaspoon sesame oil
40 wonton wrappers
2 cups baby bok choy, trimmed


Instructions

Place chicken stock, ginger slices, smashed garlic, 2 tbsp soy sauce, and rice vinegar in a large pot and bring to a simmer.
In a bowl, combine ground chicken, green onions, grated ginger, 1 tsp soy sauce, and 0.5 tsp sesame oil.
Place a teaspoon of chicken filling in the center of a wonton wrapper and fold into your desired shape, sealing edges with a little water.
Once the broth has simmered for 15 minutes to infuse flavor, remove the ginger slices and garlic.
Add the bok choy to the broth and cook for 2 minutes.
Carefully drop the wontons into the simmering broth and cook for 4-5 minutes until the chicken is cooked through.
Serve hot, ladling dumplings and broth into bowls.


Notes

Ensure all edges of the wontons are tightly sealed to prevent the filling from coming out during cooking. You can substitute chicken with ground turkey or minced shrimp.
