Ingredients
- 2 cups cooked and shredded chicken (about 1 pound)
- 1 cup corn kernels
- 1 cup black beans, drained and rinsed
- 1/2 cup diced tomatoes
- 1/4 cup finely chopped onion
- 1/4 cup chopped fresh cilantro
- 1 cup mayonnaise
- 2 tablespoons taco seasoning
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
1. In a large bowl, combine the shredded chicken, corn, black beans, tomatoes, onion, and cilantro until evenly mixed.
2. In a separate small bowl, whisk together the mayonnaise, taco seasoning, and lime juice until smooth and creamy.
3. Pour the dressing over the chicken mixture and stir until everything is well coated.
4. Taste and adjust seasoning with salt and pepper as needed.
5. Serve immediately or chill in the refrigerator until ready to serve.
